Wet Burritos

Wet burritos are a delightful twist on the classic burrito, drenched in a flavorful sauce and often baked to perfection. Here’s a recipe for making delicious wet burritos at home.

Wet Burritos Recipe

Ingredients:

For the Burritos:

  • 1 lb ground beef (or shredded chicken, pork, or a meat substitute)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1/4 cup water
  • 1 can (15 oz) refried beans
  • 1 can (4 oz) diced green chilies (optional)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas

For the Sauce:

  • 1 can (10 oz) red enchilada sauce or green enchilada sauce (for a different flavor profile)
  • 1 cup tomato sauce
  • 1/2 cup beef or chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

For Toppings:

  • Sour cream
  • Chopped lettuce
  • Diced tomatoes
  • Sliced avocado
  • Chopped cilantro
  • Sliced jalapeños

Instructions:

  1. Prepare the Filling:
    • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
    • Add the chopped onion and minced garlic to the skillet, cooking until the onion is soft and translucent.
    • Stir in the taco seasoning mix and water. Let it simmer for a few minutes until the sauce thickens.
    • Mix in the refried beans and diced green chilies (if using) until well combined and heated through. Set aside.
  2. Assemble the Burritos:
    • Preheat your oven to 375°F (190°C).
    • Warm the tortillas slightly to make them more pliable.
    • Place a generous portion of the beef and bean mixture in the center of each tortilla. Add a handful of shredded cheese.
    • Roll the tortillas tightly into burritos, folding in the sides as you go.
    • Place the burritos seam-side down in a large baking dish.
  3. Make the Sauce:
    • In a medium saucepan, combine the enchilada sauce, tomato sauce, beef/chicken broth, cumin, chili powder, salt, and pepper.
    • Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for about 5 minutes to blend the flavors.
  4. Bake the Burritos:
    • Pour the sauce evenly over the burritos in the baking dish, covering them completely.
    • Sprinkle more shredded cheese on top.
    • Cover the dish with foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Carefully remove the burritos from the oven and let them cool slightly.
    • Serve them hot, topped with sour cream, lettuce, tomatoes, avocado, cilantro, and sliced jalapeños.
