🍉 Watermelon Feta Salad

Ingredients:

  • 4 cups seedless watermelon, cubed or balled

  • 1 cup cucumber, sliced (optional but refreshing)

  • ½ cup red onion, very thinly sliced

  • ¾ cup feta cheese, crumbled

  • ¼ cup fresh mint leaves, torn (basil also works)

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp fresh lime juice (or lemon juice)

  • Salt & black pepper, to taste


Instructions:

  1. Prep the ingredients: Cut the watermelon into bite-sized cubes or use a melon baller. Thinly slice cucumbers and onions.

  2. Combine: In a large bowl, gently toss watermelon, cucumber, and red onion.
