Ingredients

For the Picadillo Filling:

  • 1 lb (450 g) ground beef
  • 1 medium potato, peeled and diced into small cubes
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium tomato, finely chopped (or 1/2 cup tomato sauce)
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

For the Taquitos:

  • 12 small corn tortillas
  • Oil for frying (vegetable or canola)

Optional Garnishes:

  • Shredded lettuce
  • Mexican crema or sour cream
  • Crumbled queso fresco
  • Salsa or guacamole
  • Instructions

    1. Prepare the Picadillo Filling:
      • Heat 1 tablespoon of oil in a large skillet over medium heat.
      • Add the onion and garlic, sautéing until fragrant and softened.
      • Add the ground beef and cook until browned, breaking it up into small pieces.
      • Stir in the diced potatoes and cook for about 5 minutes.
      • Add the chopped tomato (or tomato sauce), cumin, chili powder, salt, and pepper. Mix well.
      • Cover and simmer for 10–15 minutes, stirring occasionally, until the potatoes are tender and the mixture is well combined. Remove from heat and let cool slightly.
    2. Assemble the Taquitos:
      • Warm the tortillas in a dry skillet or microwave to make them pliable.
      • Place a small amount of picadillo filling (about 2–3 tablespoons) along the center of each tortilla. Roll tightly and secure with a toothpick if needed.
    3. Fry the Taquitos:
      • Heat oil in a deep skillet or frying pan over medium heat.
      • Carefully place the taquitos seam-side down into the hot oil. Fry in batches until golden and crispy, about 2–3 minutes per side.
      • Drain on paper towels to remove excess oil.
    4. Serve:
      • Arrange the taquitos on a serving plate and garnish with shredded lettuce, crema, queso fresco, and your favorite salsa or guacamole.
