Traditional Turkish Bread

Here’s a classic Turkish Bread (Pide) recipe — soft, chewy, golden, and perfect with dips, kebabs, or just olive oil and za’atar. This is the type of flat, round or oval bread often served in Turkish restaurants or bakeries.

🇹🇷 Traditional Turkish Bread (Ramazan Pidesi)

Ingredients:

  • 3 ½ cups all-purpose flour (or bread flour)

  • 1 ¼ cups warm water (about 110°F / 45°C)

  • 2 ¼ tsp instant yeast (1 packet)

  • 1 ½ tsp sugar

  • 1 ½ tsp salt

  • 2 tbsp olive oil

For the topping:

  • 1 egg yolk + 1 tbsp milk (for glaze)

  • Nigella seeds or sesame seeds (or both)

Instructions:

  1. Activate the Yeast:
    In a large bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.

  2. Make the Dough:
    Add flour, salt, and olive oil. Mix to form a sticky dough. Knead for 8–10 minutes until smooth and elastic.

  3. First Rise:
    Cover and let the dough rise in a warm spot for 1 hour or until doubled in size.

  4. Shape the Bread:
    Preheat oven to 230°C (450°F). Line a baking sheet with parchment.
    Lightly flour your hands, then gently press the dough into an oval (about ½ inch thick).

  5. Decorate:
    Brush with egg yolk + milk. Using your fingers, press a border around the edge and make a criss-cross pattern inside — don’t cut all the way through, just create indentations.
    Sprinkle with sesame and/or nigella seeds.

  6. Bake:
    Bake for 15–18 minutes until golden brown and puffy.

  7. Cool & Serve:
    Let cool slightly. Serve warm or at room temperature with dips, soups, or grilled dishes.
