Traditional Mexican Huevos Rancheros is a classic breakfast dish that combines rustic, bold flavors and simple ingredients. It translates to “ranch-style eggs” and is known for being hearty, comforting, and full of rich, spicy character.


🌶️ Traditional Huevos Rancheros Recipe

Ingredients:

  • 2 corn tortillas

  • 2 eggs

  • 1 cup ranchero sauce (see below for homemade recipe)

  • 1/2 cup refried beans (optional but traditional)

  • 2 tbsp vegetable oil

  • Salt and pepper to taste

  • Fresh cilantro, crumbled queso fresco, and avocado slices (for garnish)


For the Ranchero Sauce:

  • 2 medium tomatoes, chopped (or 1 cup canned diced tomatoes)

  • 1/4 onion, chopped

  • 1 garlic clove, minced

  • 1 jalapeño or serrano pepper, chopped (remove seeds for less heat)

  • 1 tbsp vegetable oil

  • Salt to taste


🔪 Instructions:

1. Make the Ranchero Sauce:

  • In a skillet, heat 1 tbsp oil over medium heat.

  • Sauté the onion, garlic, and chile for 2–3 minutes.

  • Add tomatoes and cook until soft (about 7–10 minutes).

  • Blend until smooth or leave chunky, depending on preference.

  • Return to skillet, season with salt, and simmer for 5 more minutes.

2. Prepare Tortillas:

  • In a clean skillet, heat a little oil and lightly fry the corn tortillas until just crispy but still pliable (about 30 seconds per side). Set aside.

3. Cook the Eggs:

  • In the same skillet, fry the eggs sunny-side up or to your liking. Season with salt and pepper.

4. Assemble Huevos Rancheros:

  • On each plate, spread a spoonful of warm refried beans over a tortilla.

  • Top with a fried egg and generously spoon over the ranchero sauce.

  • Garnish with queso fresco, chopped cilantro, and avocado slices.


🌮 Tips & Variations:

  • Beans: Refried black or pinto beans are both traditional.

  • Add-ins: Sautéed chorizo or crispy bacon adds a savory twist.

  • Tortilla swap: Try with a lightly crisped flour tortilla for a different texture.

  • More heat? Add hot sauce or chipotle to the ranchero sauce.
