🍅 Tomato Basil Garlic Bread

Ingredients

  • 1 large baguette or Italian bread loaf

  • 3–4 ripe tomatoes (Roma or cherry tomatoes work best)

  • 3–4 garlic cloves, minced

  • 4–5 tbsp extra virgin olive oil

  • 1 cup fresh basil leaves, chopped (reserve a few whole for garnish)

  • 1 cup shredded mozzarella or fresh mozzarella slices (optional, for a cheesy version)

  • 2 tbsp grated Parmesan

  • 1 tsp balsamic glaze (optional)

  • Salt & freshly cracked black pepper, to taste

Instructions

  1. Prep the Bread:

    • Preheat oven to 400°F (200°C).

    • Slice the baguette in half lengthwise, then cut into serving-size pieces.

  2. Make the Tomato Mixture:

    • Dice the tomatoes and place them in a bowl.

    • Mix with minced garlic, olive oil, chopped basil, salt, and pepper. Let it sit for 10 minutes to release flavors.

  3. Toast the Bread:

    • Arrange the bread slices on a baking sheet.

    • Drizzle lightly with olive oil.

    • Toast in the oven for 5–7 minutes until golden and crisp.

  4. Assemble:

    • Spoon the tomato-basil mixture generously over each slice of bread.

    • Sprinkle with Parmesan, and if using mozzarella, return to the oven for 2–3 minutes until melted.

  5. Finish & Serve:

    • Garnish with extra basil leaves and a drizzle of balsamic glaze (optional).

    • Serve warm as an appetizer or side.

Tips & Variations:

  • For extra garlic flavor, rub a cut garlic clove directly over the toasted bread before topping.

  • Add red pepper flakes for a little heat.

  • Use heirloom tomatoes for a colorful presentation.
