Sweet Blueberry Biscuits

Here’s a delicious recipe for Sweet Blueberry Biscuits — soft, fluffy, lightly sweet, and bursting with juicy blueberries. Perfect for breakfast, brunch, or a cozy afternoon treat.

🍇 Sweet Blueberry Biscuits

Ingredients:

  • 2 cups all-purpose flour (or gluten-free 1:1 if needed)

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, cold and cubed

  • ¾ cup buttermilk (plus more if needed)

  • 1 tsp vanilla extract

  • 1 cup fresh or frozen blueberries (if frozen, don’t thaw)

  • Optional: coarse sugar for topping

For Glaze (optional):

  • ½ cup powdered sugar

  • 1–2 tbsp milk or lemon juice

  • ¼ tsp vanilla extract

Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

  3. Cut in butter: Add the cold cubed butter and use a pastry cutter or your fingers to work it into the flour until it resembles coarse crumbs.

  4. Add wet ingredients: Stir in buttermilk and vanilla just until dough begins to come together. It should be slightly sticky but not wet.

  5. Fold in blueberries gently to avoid bursting them.

  6. Shape biscuits: Turn dough out onto a floured surface. Gently pat into a ¾-inch thick rectangle. Cut into rounds or squares using a biscuit cutter or knife.

  7. Bake: Place on the baking sheet, spacing slightly apart. Sprinkle tops with coarse sugar if desired. Bake 15–18 minutes until golden brown.

  8. Glaze (optional): Whisk glaze ingredients and drizzle over warm biscuits.

💡 Tips:

  • Use frozen blueberries to keep the dough from turning purple.

  • Don’t overwork the dough—this keeps the biscuits tender.

  • For extra richness, brush tops with cream before baking.
