Here’s a recipe for a Sugar-Free Lemon Oreo Dessert that delivers creamy, zesty flavors with a light and refreshing finish, minus the sugar. With a lemony twist on a classic Oreo dessert, this version uses sugar-free ingredients to satisfy your sweet tooth without compromising on taste.

Ingredients:

For the Crust:

  • 20 sugar-free lemon-flavored sandwich cookies (such as sugar-free Lemon Oreos or an equivalent)
  • 3 tbsp melted butter (unsalted)

For the Cream Cheese Layer:

  • 8 oz sugar-free cream cheese, softened
  • 1 cup sugar-free whipped topping
  • ½ cup powdered sugar substitute (such as Swerve or erythritol)

For the Lemon Pudding Layer:

  • 1 package (3.4 oz) sugar-free lemon instant pudding mix
  • 2 cups cold milk (or unsweetened almond milk for a lower-carb option)

For the Whipped Topping:

  • 1 cup sugar-free whipped topping (reserve extra for garnish if desired)

For Garnish (Optional):

  • Crushed sugar-free lemon-flavored sandwich cookies
  • Fresh lemon zest

Instructions:

  1. Prepare the Crust
    • Crush the lemon-flavored sugar-free cookies in a food processor until they reach a fine crumb consistency.
    • Mix the cookie crumbs with melted butter until well-combined.
    • Press the mixture into the bottom of a 9×9-inch baking dish to form an even crust layer.
    • Place in the refrigerator to chill and set while you prepare the other layers.
  2. Prepare the Cream Cheese Layer
    • In a medium bowl, beat the softened cream cheese and powdered sugar substitute until smooth.
    • Gently fold in 1 cup of sugar-free whipped topping.
    • Spread this cream cheese mixture evenly over the chilled cookie crust.
  3. Prepare the Lemon Pudding Layer
    • In another bowl, whisk together the lemon pudding mix and cold milk until thickened, about 2-3 minutes.
    • Spread the pudding mixture over the cream cheese layer in the baking dish.
  4. Add the Whipped Topping
    • Spread the remaining whipped topping over the lemon pudding layer for a light, fluffy finish.
  5. Chill and Serve
    • Refrigerate the dessert for at least 2 hours (or until set) before serving.
    • Before serving, garnish with extra crushed lemon-flavored cookies and fresh lemon zest, if desired.

Tips:

  • For the best texture, allow the dessert to set overnight in the fridge.
  • Use a sugar-free lemon pudding that doesn’t require heating for ease.
