strawberry mousse

delicious strawberry mousse recipe for you to try:

Ingredients:

  • 1 pound (450g) fresh strawberries, hulled and halved
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 teaspoons gelatin powder
  • 2 tablespoons cold water
  • 1 cup (240ml) heavy whipping cream

Instructions:

  1. Prepare the Strawberries:
    • Place the strawberries, sugar, and lemon juice in a blender or food processor. Blend until smooth.
  2. Cook the Strawberry Mixture:
    • Pour the strawberry puree into a saucepan. Bring to a simmer over medium heat, stirring frequently.
    • Once it starts simmering, cook for about 5 minutes, then remove from heat and let it cool slightly.
  3. Bloom the Gelatin:
    • In a small bowl, sprinkle the gelatin over the cold water. Let it sit for a few minutes to bloom (absorb the water).
  4. Combine Gelatin with Strawberry Mixture:
    • Once the gelatin has bloomed, add it to the warm strawberry mixture and stir until the gelatin is completely dissolved.
  5. Cool the Mixture:
    • Allow the mixture to cool to room temperature. You can speed this up by placing the saucepan in a bowl of ice water and stirring occasionally.
  6. Whip the Cream:
    • In a large bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  7. Fold in the Strawberry Mixture:
    • Gently fold the cooled strawberry mixture into the whipped cream until well combined.
  8. Chill the Mousse:
    • Spoon the mousse into serving dishes or glasses. Cover and refrigerate for at least 2 hours, or until set.
  9. Serve:
    • Serve chilled, garnished with fresh strawberries or a dollop of whipped cream if desired.
