Strawberry Frosted Strawberry Cake is a dreamy dessert that’s bursting with berry flavor from top to bottom. This cake combines fluffy, moist strawberry cake layers with a rich, creamy strawberry frosting made with real strawberries. It’s the perfect centerpiece for spring celebrations, summer birthdays, or anytime you crave a fruity, vibrant treat that looks as good as it tastes!

Ingredients

For the Strawberry Cake:

  • 1 box (15.25 oz) white cake mix

  • 1 cup finely chopped fresh strawberries

  • 1 box (3 oz) strawberry Jell-O gelatin

  • 4 large eggs

  • ¾ cup vegetable oil

  • ½ cup milk

  • ½ cup sour cream

  • 1 tsp vanilla extract

For the Strawberry Frosting:

  • 1 cup unsalted butter, softened

  • 3½–4 cups powdered sugar

  • ⅓ cup freeze-dried strawberries, ground into powder

  • 2–3 tbsp heavy cream or milk

  • 1 tsp vanilla extract

  • Pinch of salt


Instructions

Make the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment.

  2. In a large mixing bowl, combine the cake mix, strawberry Jell-O, eggs, oil, milk, sour cream, and vanilla. Beat on medium speed for 2 minutes.

  3. Gently fold in the chopped strawberries.

  4. Divide batter evenly between the pans. Bake for 25–30 minutes, or until a toothpick comes out clean.

  5. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Make the Frosting:

  1. In a large bowl, beat the butter until creamy and smooth.

  2. Add the powdered sugar 1 cup at a time, beating well between each addition.

  3. Mix in the strawberry powder, vanilla, and a pinch of salt.

  4. Add milk or cream as needed to reach a spreadable consistency.

Assemble the Cake:

  1. Level the cake layers if needed. Place one layer on a cake stand and spread frosting on top.

  2. Add the second layer and frost the top and sides of the cake.

  3. Decorate with fresh strawberries if desired.
