Strawberry Crunch Cheesecake Bites are little nuggets of joy that blend the creamy richness of cheesecake with a fruity strawberry flavor and a nostalgic crunch topping inspired by strawberry shortcake ice cream bars. These bite-sized treats are perfect for dessert trays, party platters, or even just a sweet indulgence. Here’s how you can make them!

Ingredients

For the Cheesecake Base:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream, whipped to soft peaks

For the Strawberry Crunch Topping:

  • 1/2 cup freeze-dried strawberries
  • 1/2 cup golden sandwich cookies (like Golden Oreos)
  • 2 tbsp melted butter

  • Mini cupcake liners or a silicone mold

Instructions

1. Make the Cheesecake Base

  1. In a mixing bowl, beat the cream cheese with the sugar and vanilla extract until smooth and creamy.
  2. Gently fold in the whipped heavy cream until the mixture is fluffy and light.
  3. Spoon the cheesecake mixture into mini cupcake liners or a silicone mold, filling each cavity nearly to the top.
  4. Place in the freezer for 1-2 hours to firm up.

2. Prepare the Strawberry Crunch Topping

  1. In a food processor, pulse the freeze-dried strawberries and golden sandwich cookies until you have a crumbly, pink-and-golden mixture.
  2. Pour in the melted butter and pulse briefly to incorporate it; the crumbs should hold together slightly when pressed.

3. Assemble the Bites

  1. Once the cheesecake bites are firm, remove them from the freezer and sprinkle or press a generous amount of the strawberry crunch topping onto each one, making sure it sticks to the top.
  2. If desired, add a small strawberry slice on top for garnish.

4. Serve and Enjoy!

Let the bites sit at room temperature for about 5-10 minutes before serving so they soften slightly for the perfect creamy texture.
