Ingredients
For the cake:

1½ cups (190g) all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

3 large eggs, room temperature

1 cup (200g) granulated sugar

2 tbsp lemon zest (about 2 lemons)

2 tbsp fresh lemon juice

1 cup (240ml) sour cream (or Greek yogurt)

½ cup (120ml) vegetable oil

1 tsp vanilla extract

½ tsp lemon extract (optional for stronger flavor)
For the glaze:

1 cup (120g) powdered sugar

2–3 tbsp fresh lemon juice

Prep: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

Beat eggs & sugar: In a large bowl, whisk eggs, sugar, and lemon zest until pale and fluffy.

Add wet ingredients: Mix in lemon juice, sour cream, oil, vanilla, and lemon extract until smooth.

Combine: Gradually fold the dry ingredients into the wet mixture, stirring until just combined (don’t overmix).

Bake: Pour batter into the loaf pan. Bake 50–55 minutes, or until a toothpick comes out clean. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
