Ingredients

For the cake:

  • 1½ cups (190g) all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 3 large eggs, room temperature

  • 1 cup (200g) granulated sugar

  • 2 tbsp lemon zest (about 2 lemons)

  • 2 tbsp fresh lemon juice

  • 1 cup (240ml) sour cream (or Greek yogurt)

  • ½ cup (120ml) vegetable oil

  • 1 tsp vanilla extract

  • ½ tsp lemon extract (optional for stronger flavor)

For the glaze:

  • 1 cup (120g) powdered sugar

  • 2–3 tbsp fresh lemon juice


Instructions

  1. Prep: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

  3. Beat eggs & sugar: In a large bowl, whisk eggs, sugar, and lemon zest until pale and fluffy.

  4. Add wet ingredients: Mix in lemon juice, sour cream, oil, vanilla, and lemon extract until smooth.

  5. Combine: Gradually fold the dry ingredients into the wet mixture, stirring until just combined (don’t overmix).

  6. Bake: Pour batter into the loaf pan. Bake 50–55 minutes, or until a toothpick comes out clean. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

  7. Glaze: Whisk powdered sugar with lemon juice until smooth. Pour over cooled cake and let set before slicing.
