spicy chilaquiles with cheese

Ingredients:

  • 8 corn tortillas, cut into triangles
  • 1 cup red or green salsa (depending on your heat preference)
  • 1 jalapeño, finely chopped (optional for extra spice)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar, queso fresco, or a Mexican cheese blend)
  • 2 tablespoons vegetable oil
  • 2 eggs (optional for topping)
  • 1/4 cup sour cream or Mexican crema
  • Fresh cilantro, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat the oil in a large skillet over medium heat. Once hot, fry the tortilla triangles until they are golden and crispy. Drain on paper towels and set aside.
  2. In the same skillet, sauté the onions, garlic, and jalapeño (if using) until soft and fragrant, about 3-4 minutes.
