🥘 Spiced Salmon with Cheesy Asparagus & Garlic Herb Potatoes

Ingredients

For the Spiced Salmon

  • 4 salmon fillets (about 6 oz each, skin-on)

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • ½ tsp cayenne pepper (adjust to spice preference)

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Salt and black pepper, to taste

  • 1 lemon, cut into wedges

For the Cheesy Asparagus

  • 1 lb asparagus, trimmed

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • ½ cup shredded mozzarella (or Gruyère for a nutty flavor)

  • ¼ cup grated Parmesan

  • Salt and pepper, to taste

For the Garlic Herb Potatoes

  • 1 ½ lbs baby potatoes (halved or quartered if large)

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)

  • 1 tbsp fresh parsley, chopped

  • 1 tsp thyme leaves

  • Salt and black pepper, to taste


Instructions

1. Prepare the Garlic Herb Potatoes

  1. Preheat oven to 425°F (220°C).

  2. Toss potatoes with olive oil, garlic, rosemary, thyme, parsley, salt, and pepper.

  3. Spread on a baking sheet and roast for 25–30 minutes, tossing halfway, until golden and crispy.

2. Make the Cheesy Asparagus

  1. On a separate sheet pan, toss asparagus with olive oil, garlic, salt, and pepper.

  2. Roast for 10 minutes, then sprinkle with mozzarella and Parmesan.

  3. Return to oven for another 5 minutes, until cheese is melted and bubbly.

3. Cook the Spiced Salmon

  1. Pat salmon fillets dry, drizzle with olive oil, and rub with paprika, cumin, cayenne, garlic powder, onion powder, salt, and pepper.

  2. Heat a large skillet (or grill pan) over medium-high heat. Place salmon skin-side down and cook for 4–5 minutes, until skin is crisp.

  3. Flip and cook another 2–3 minutes, or until salmon is just cooked through.

  4. Squeeze fresh lemon juice over the top.

4. Assemble & Serve

  • Plate the salmon alongside cheesy asparagus and crispy garlic herb potatoes.

  • Garnish with extra parsley and lemon wedges for freshness.
