Spanish rice for a bbq

Spanish rice is a flavorful and aromatic side dish that pairs wonderfully with BBQ. Here’s a simple and delicious recipe to make Spanish rice for your BBQ:

Ingredients:

  • 1 cup long-grain white rice
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 can (14.5 oz) diced tomatoes (or 2 medium fresh tomatoes, chopped)
  • 1 cup chicken or vegetable broth
  • 1 tsp ground cumin
  • 1 tsp paprika (smoked paprika for extra flavor)
  • 1/2 tsp chili powder (optional for heat)
  • Salt and pepper to taste
  • 1/2 cup frozen peas (optional)
  • Fresh cilantro or parsley for garnish (optional)

Instructions:

  1. Rinse the Rice: Rinse the rice under cold water until the water runs clear. This removes excess starch and helps make the rice fluffier.
  2. Sauté the Aromatics: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened and fragrant.
  3. Toast the Rice: Add the rinsed rice to the skillet with the onions and garlic. Stir frequently for 2-3 minutes until the rice is lightly toasted.
  4. Add Tomatoes and Spices: Stir in the diced tomatoes (with their juice), cumin, paprika, chili powder, and a pinch of salt and pepper. Cook for another 2 minutes to let the flavors combine.
  5. Add Broth and Simmer: Pour in the chicken or vegetable broth, bring it to a simmer, then reduce the heat to low. Cover the skillet with a lid and let the rice cook for 18-20 minutes, or until the rice is tender and the liquid has been absorbed. Avoid stirring while it’s cooking, as it can make the rice clump together.
  6. Finish the Rice: Once the rice is cooked, fluff it with a fork to separate the grains. Stir in the frozen peas (if using) and cover again for a few minutes until the peas are heated through.
  7. Serve: Garnish with fresh cilantro or parsley, if desired. Serve alongside your BBQ as a flavorful and colorful side dish.
