Smothered Green Chile Bean Burrito

A Smothered Green Chile Bean Burrito is the ultimate comfort food—a warm, cheesy, and flavor-packed burrito drenched in a luscious green chile sauce. Perfect for a cozy dinner, this dish brings a taste of New Mexico or the Southwest straight to your kitchen.

Ingredients

For the Burritos:

  • 4 large flour tortillas

  • 2 cups refried beans (homemade or canned)

  • 1 cup cooked pinto or black beans (optional, for texture)

  • 1 teaspoon cumin

  • 1 teaspoon garlic powder

  • 1/2 teaspoon chili powder

  • 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)

  • 1/2 cup diced onions (optional)

For the Green Chile Sauce:

  • 2 tablespoons butter or oil

  • 2 tablespoons flour

  • 2 cups vegetable or chicken broth

  • 1 cup roasted green chiles (Hatch or Anaheim, diced)

  • 1 teaspoon garlic powder

  • 1 teaspoon cumin

  • Salt and pepper, to taste

  • 1/2 cup sour cream (optional, for a creamier sauce)

Toppings:

  • Shredded lettuce

  • Diced tomatoes

  • Sliced avocado

  • Chopped cilantro

  • Sour cream

  • Cotija or queso fresco

Instructions

Make the Green Chile Sauce:

  1. In a saucepan, melt butter over medium heat. Whisk in the flour and cook for 1–2 minutes until it forms a light roux.

  2. Slowly add broth, whisking continuously to avoid lumps.

  3. Stir in the green chiles, garlic powder, cumin, salt, and pepper. Let simmer for 5–10 minutes.

  4. If using sour cream, remove from heat and stir it in for extra creaminess.

Prepare the Burritos:

  1. In a pan over medium heat, warm the refried beans and mix in whole beans, cumin, garlic powder, and chili powder.

  2. Lay a tortilla flat and spread a generous amount of the bean mixture in the center. Sprinkle with cheese and diced onions.

  3. Fold the sides in and roll tightly. Repeat with remaining tortillas.

Assemble and Bake:

  1. Preheat oven to 375°F (190°C).

  2. Place the burritos seam-side down in a baking dish and pour the green chile sauce generously over them. Sprinkle extra cheese on top.

  3. Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly.

Serve:

  1. Top with shredded lettuce, tomatoes, avocado, cilantro, and any other toppings you love.

  2. Serve hot with a side of Mexican rice or tortilla chips.
