Instructions
Make the Green Chile Sauce:
-
In a saucepan, melt butter over medium heat. Whisk in the flour and cook for 1–2 minutes until it forms a light roux.
-
Slowly add broth, whisking continuously to avoid lumps.
-
Stir in the green chiles, garlic powder, cumin, salt, and pepper. Let simmer for 5–10 minutes.
-
If using sour cream, remove from heat and stir it in for extra creaminess.
Prepare the Burritos:
-
In a pan over medium heat, warm the refried beans and mix in whole beans, cumin, garlic powder, and chili powder.
-
Lay a tortilla flat and spread a generous amount of the bean mixture in the center. Sprinkle with cheese and diced onions.
-
Fold the sides in and roll tightly. Repeat with remaining tortillas.
Assemble and Bake:
-
Preheat oven to 375°F (190°C).
-
Place the burritos seam-side down in a baking dish and pour the green chile sauce generously over them. Sprinkle extra cheese on top.
-
Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly.
Serve:
-
Top with shredded lettuce, tomatoes, avocado, cilantro, and any other toppings you love.
-
Serve hot with a side of Mexican rice or tortilla chips.
