Slow Cooker Irish Stew

Ingredients:

  • 2 lbs (900g) lamb shoulder or beef chuck, cut into chunks

  • 3 large potatoes, peeled and chopped into chunks

  • 3 carrots, sliced thick

  • 2 onions, roughly chopped

  • 2 parsnips (optional), chopped

  • 3 cloves garlic, minced

  • 3 cups beef or lamb stock

  • 1 cup Guinness (optional, for authentic flavor)

  • 2 tbsp tomato paste

  • 2 tbsp flour (to thicken)

  • 2 tbsp vegetable oil or butter

  • 2 tsp salt (or to taste)

  • 1 tsp black pepper

  • 2 tsp fresh thyme (or 1 tsp dried)

  • 2 bay leaves

  • Fresh parsley, chopped (for garnish)


Instructions:

  1. Brown the Meat (optional but recommended):
    Heat oil in a skillet, coat meat in flour, then brown on all sides. Transfer to the slow cooker.

  2. Layer the Veggies:
    Place onions, carrots, potatoes, and parsnips into the slow cooker.

  3. Add Flavorings:
    Stir in garlic, tomato paste, thyme, salt, pepper, and bay leaves.

  4. Pour in Liquids:
    Add stock and Guinness. Stir well to combine.

  5. Cook:

    • Low for 8–9 hours

    • High for 4–5 hours
      (Until meat is tender and vegetables are soft.)
