Slow Cooker Hamburger Potato Casserole

There’s nothing more comforting than coming home to the smell of a hearty, slow-cooked meal—and this Hamburger Potato Casserole is as satisfying as it gets. With layers of seasoned ground beef, tender potatoes, and creamy, cheesy goodness, this dish is perfect for busy weeknights or a lazy Sunday dinner. Toss everything in your slow cooker and let it do the work while you go about your day. It’s simple, delicious, and guaranteed to be a family favorite.

Ingredients:

  • 1 ½ lbs ground beef

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 6 medium russet potatoes, peeled and thinly sliced

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 can (10.5 oz) cream of cheddar soup (or another can of cream of mushroom)

  • 1 cup milk

  • 2 cups shredded cheddar cheese

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika (optional)

  • Chopped parsley for garnish (optional)

  • Instructions:

    1. Brown the Beef:
      In a skillet over medium heat, cook the ground beef with the chopped onion and garlic until no longer pink. Drain excess grease.

    2. Prepare the Sauce:
      In a bowl, mix the cream of mushroom soup, cream of cheddar soup, milk, salt, pepper, and paprika until well combined.

    3. Layer the Ingredients:
      Grease your slow cooker. Begin layering:

      • A layer of sliced potatoes

      • A portion of the ground beef mixture

      • A bit of shredded cheese

      • A drizzle of the soup mixture
        Repeat until all ingredients are used up, finishing with cheese on top.

    4. Cook:
      Cover and cook on low for 6–7 hours or high for 3–4 hours, until the potatoes are tender.

    5. Serve:
      Let sit for 10 minutes before serving. Sprinkle with chopped parsley if desired.

    6. Tips:

      • You can substitute ground turkey or sausage for a twist.

      • Add frozen mixed vegetables for extra nutrition.

      • Use a mandoline slicer for evenly thin potato slices.
