Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 12 oz pasta (spaghetti, linguine, or fettuccine)

  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (28 oz) crushed tomatoes
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

  • Grated Parmesan cheese (optional)
  • Lemon wedges for serving

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.
  2. Prepare the Shrimp:
    • Season the shrimp with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté the shrimp for 2-3 minutes on each side until just cooked through and pink. Remove from the skillet and set aside.
  3. Make the Marinara Sauce:

  4. Combine Shrimp and Sauce:
    • Return the shrimp to the skillet and toss them in the marinara sauce. Cook for an additional 2-3 minutes to combine the flavors.
  5. Assemble the Dish:
    • Add the cooked pasta to the skillet, tossing it gently in the sauce. If the sauce is too thick, add some of the reserved pasta water to loosen it up.
    • Taste and adjust seasoning, adding more salt, pepper, or red pepper flakes if needed.
  6. Serve:
    • Garnish with freshly chopped parsley or basil and a sprinkle of Parmesan cheese if desired. Serve with lemon wedges on the side for a fresh, zesty finish.
