Ingredients:
For the Shrimp:
- 1 lb (450 g) large shrimp, peeled and deveined
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup white wine or chicken broth
- 1 tablespoon lemon juice
- 1/4 cup fresh parsley, chopped
For the Linguine:
- 8 oz (225 g) linguine
- Salt, for pasta water
- 2 tablespoons olive oil
- Freshly grated Parmesan cheese, for serving
Instructions:
- Cook the Linguine:
- Bring a large pot of salted water to a boil.
- Add the linguine and cook according to the package instructions until al dente.
- Drain and toss with 2 tablespoons of olive oil to prevent sticking. Set aside.
- Prepare the Shrimp:
- Season the shrimp with salt and pepper.
- In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter.
- Once the butter has melted, add the garlic and red pepper flakes (if using). Sauté for about 1 minute, until fragrant.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side, until pink and opaque.
- Remove the shrimp from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add the remaining 2 tablespoons of butter.
- Pour in the white wine or chicken broth and lemon juice. Stir and cook for 2-3 minutes, allowing the sauce to reduce slightly.
- Add the chopped parsley and return the shrimp to the skillet. Toss to coat the shrimp in the sauce and heat through.
- Combine and Serve:
- Add the cooked linguine to the skillet with the shrimp and sauce. Toss to combine, ensuring the pasta is well coated with the garlic butter sauce.
- Serve immediately with freshly grated Parmesan cheese and additional parsley, if desired.
