Shrimp Fried Rice

Shrimp Fried Rice is a quick and flavorful dish, perfect for weeknight dinners or weekend gatherings. This dish combines tender shrimp with fragrant rice, fresh vegetables, and a savory sauce, making it an irresistible option that’s both satisfying and easy to customize.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice, preferably day-old
  • 2 tbsp vegetable oil, divided
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 cup carrots, diced
  • 1/2 cup peas
  • 2 eggs, lightly beaten
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1/2 tsp sesame oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Prepare the Shrimp: Season shrimp lightly with salt and pepper. Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove shrimp and set aside.
  2. Cook the Vegetables: In the same skillet, add the remaining 1 tbsp of oil. Add garlic, onion, carrots, and peas. Sauté for 3-4 minutes or until the carrots are tender.
  3. Scramble the Eggs: Push the vegetables to one side of the skillet. Pour in the beaten eggs on the other side and scramble until cooked, then mix them in with the vegetables.
  4. Combine and Flavor: Add the cooked rice to the skillet, breaking up any clumps. Pour in soy sauce, oyster sauce (if using), and sesame oil. Stir to combine and ensure everything is coated.
  5. Add Shrimp: Return the cooked shrimp to the skillet, mixing it into the rice. Cook for another 2 minutes, allowing flavors to meld.
  6. Serve: Garnish with chopped green onions, and enjoy your homemade shrimp fried rice!

Enjoy the savory blend of flavors and textures, perfect with a sprinkle of extra soy sauce or chili flakes for a bit of heat!
