🦐🦀 Shrimp-Crab Fajita Roll-Up Bombs

Ingredients:

  • 1 cup cooked shrimp, chopped

  • 1 cup cooked crab meat (fresh or imitation), flaked

  • 1 small onion, sliced thin

  • 1 small red bell pepper, sliced thin

  • 1 small green bell pepper, sliced thin

  • 2 tbsp olive oil

  • 1 tsp fajita seasoning (or taco seasoning)

  • 1 cup cream cheese, softened

  • 1 cup shredded cheddar or Mexican blend cheese

  • 1 tbsp fresh cilantro, chopped

  • Salt & pepper to taste

  • 6–8 large tortillas (flour or gluten-free)

  • 2 tbsp butter, melted (for brushing)

  • Optional: sour cream, salsa, guacamole for dipping

Instructions:

  1. Cook the veggies – Heat olive oil in a skillet over medium-high heat. Add onion and peppers, sprinkle with fajita seasoning, and sauté for 4–5 minutes until slightly softened. Remove from skillet.

  2. Prepare the filling – In a bowl, mix shrimp, crab meat, cooked veggies, cream cheese, shredded cheese, cilantro, salt, and pepper until well combined.

  3. Assemble roll-ups – Spread filling evenly over each tortilla, then roll tightly. Slice each roll into 2–3 pieces.

  4. Bake or air-fry – Place rolls seam-side down on a baking sheet. Brush tops with melted butter.

    • Oven: Bake at 375°F (190°C) for 12–15 minutes until golden and crispy.

    • Air fryer: Cook at 375°F (190°C) for 7–8 minutes.

  5. Serve hot – Pair with sour cream, salsa, or guacamole for dipping.
