Ingredients:

For the Crab Balls:

  • 1 lb fresh crab meat (picked over for shells)
  • 1 cup breadcrumbs (panko or regular, plus extra for coating)
  • 1 large egg (beaten)
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tbsp fresh lemon juice
  • 1/2 tsp Old Bay seasoning
  • 2 tbsp fresh parsley (chopped)
  • 1 small green onion (finely chopped)
  • Salt and pepper to taste

For Frying (Optional):

  • Vegetable oil (for deep or shallow frying)

For Baking:

  • Non-stick cooking spray
  • Instructions:

    1. Prepare the Mixture:
      In a large bowl, combine the crab meat, breadcrumbs, beaten egg, mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, Old Bay seasoning, parsley, and green onion. Gently mix to combine, ensuring the crab meat stays in small chunks. Season with salt and pepper to taste.
    2. Shape the Crab Balls:
      Using your hands or a small scoop, form the mixture into bite-sized balls, about 1–1.5 inches in diameter. Roll each ball lightly in breadcrumbs for a crispy exterior.
    3. Chill the Crab Balls:
      Place the crab balls on a lined baking sheet and refrigerate for at least 30 minutes. This helps them hold their shape during cooking.
    4. Cook the Crab Balls:
      • For Frying: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the crab balls in batches for 2–3 minutes, turning occasionally, until golden brown. Remove and drain on paper towels.
      • For Baking: Preheat your oven to 375°F (190°C). Place the crab balls on a greased or parchment-lined baking sheet. Lightly spray with cooking spray and bake for 15–18 minutes, turning halfway, until golden and cooked through.
    5. Serve:
      Serve the crab balls hot with your favorite dipping sauce, such as tartar sauce, spicy aioli, or cocktail sauce. Garnish with fresh parsley and lemon wedges if desired.
