Ingredients:

  • 4 ripe Roma tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 jalapeño peppers (or more for extra heat)
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 1/4 cup water
  • 2 tablespoons vinegar (white or apple cider)
  • 1 teaspoon sugar
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)

Instructions:

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add chopped onions, garlic, and jalapeños to the skillet. Sauté for 5-7 minutes until softened.
  3. Add chopped tomatoes and tomato paste. Stir for 5 minutes.
  4. Pour in water, vinegar, sugar, and cumin. Let simmer for 10-15 minutes until the mixture thickens.
