🌶 Roasted Tomato Salsa
Ingredients

6 medium ripe tomatoes

3 cloves garlic (unpeeled)

1 small white onion, quartered

2–3 fresh jalapeños or serrano peppers (adjust to heat preference)

2 tbsp fresh lime juice

½ cup fresh cilantro leaves

1 tsp salt (or to taste)

Optional: ½ tsp ground cumin for extra depth
Instructions

Roast the veggies:

Preheat oven to 220°C (425°F) or heat a grill pan.

Place tomatoes, onion, jalapeños, and garlic on a baking tray.

Roast for 15–20 minutes, turning halfway, until skins are blistered and charred.

Peel garlic:

Once cool enough to handle, peel the roasted garlic cloves.

Blend:

In a blender or food processor, combine roasted tomatoes, onion, jalapeños, garlic, lime juice, cilantro, and salt.

Blend until smooth or leave slightly chunky for texture.

Taste & adjust:

Add more salt or lime juice as needed.
