Roasted Pasta Alla Recipe

Ingredients

For the Pasta:

  • 12 ounces of your favorite pasta (penne or rigatoni works well)
  • Salt (for pasta water)

For the Roasted Vegetables:

  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, diced (any color)
  • 1 medium zucchini, diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)
  • Fresh basil for garnish

For the Sauce:

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Roast the Vegetables:
    • On a large baking sheet, combine the cherry tomatoes, bell pepper, zucchini, onion, and minced garlic.
    • Drizzle with olive oil, season with salt, pepper, and Italian seasoning, and toss to coat evenly.
    • Spread the vegetables out in a single layer and roast for about 20-25 minutes, or until they are tender and slightly caramelized.
  3. Cook the Pasta:
    • While the vegetables are roasting, bring a large pot of salted water to a boil.
    • Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  4. Make the Sauce:
    • In a large skillet over medium heat, combine the heavy cream and bring it to a gentle simmer.
    • Stir in the grated Parmesan cheese and red pepper flakes (if using). Season with salt and pepper to taste. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
  5. Combine Everything:
    • Add the drained pasta to the skillet with the sauce and toss to combine.
    • Gently fold in the roasted vegetables.
  6. Serve:
    • Garnish with fresh basil and additional Parmesan cheese, if desired. Serve warm.
