Roast Chicken

Roasting chicken is one of the simplest ways to enjoy a comforting, home-cooked meal with minimal effort. This recipe brings out the natural flavors of the chicken, enhanced by the aromatic herbs, garlic, and lemon. Roasting the chicken at a high temperature ensures a golden, crispy skin while keeping the meat tender and juicy.

Ingredients:

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, halved
  • 1 onion, quartered
  • Fresh rosemary, thyme, or your favorite herbs
  • Salt and pepper to taste
  • 1 cup chicken broth or water (for the bottom of the pan)

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Prepare the chicken: Pat the chicken dry with paper towels. Rub the olive oil all over the chicken, both inside and out. Sprinkle generously with salt and pepper.
  3. Stuff the cavity: Place the garlic, lemon halves, onion, and a few sprigs of rosemary or thyme inside the chicken cavity.
  4. Tie the legs: Using kitchen twine, tie the legs together to ensure even cooking.
  5. Roast: Place the chicken breast-side up on a roasting rack in a pan. Pour the chicken broth or water into the bottom of the pan to keep the chicken moist. Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) at the thickest part of the thigh.
  6. Rest: Let the chicken rest for 10-15 minutes before carving.
