Ranch Green Beans and Potatoes with Bacon is a savory side dish (or main dish!) that combines hearty, comforting flavors. It’s perfect for weeknight dinners, potlucks, or as a holiday favorite. Here’s how to make it:

Ingredients

(Serves 4-6)

  • 1 lb fresh green beans, trimmed (or 12 oz frozen green beans, thawed)
  • 1.5 lbs baby potatoes, halved or quartered if large (Yukon gold or red work best)
  • 6 slices of bacon, diced
  • 1 small onion, finely chopped
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1/4 cup butter, melted
  • 1/4 cup chicken broth
  • Salt and pepper, to taste
  • Optional: Fresh parsley or chives for garnish
  • Instructions

    1. Prepare the Ingredients
      • If using fresh green beans, blanch them by boiling them in salted water for 3 minutes, then transfer them to an ice bath. Drain and set aside.
    2. Cook the Bacon
      • In a large skillet, cook diced bacon over medium heat until crispy. Use a slotted spoon to remove the bacon, leaving the grease in the skillet.
    3. Cook the Potatoes
      • Add the halved potatoes to the skillet with the bacon grease. Sauté for 10-12 minutes, stirring occasionally, until they start to brown and become tender. Remove and set aside.
    4. Sauté the Onion
      • In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes.
    5. Combine Everything
      • In a large bowl or baking dish, combine the green beans, potatoes, sautéed onion, and cooked bacon. Sprinkle the ranch seasoning mix over the top.
    6. Add Butter and Broth
      • Drizzle the melted butter and chicken broth evenly over the mixture. Toss gently to coat.
    7. Bake
      • Preheat your oven to 375°F (190°C). Transfer the mixture to a greased 9×13-inch baking dish (if not already in one) and cover with foil. Bake for 20-25 minutes, removing the foil during the last 10 minutes for a slightly crispy top.
    8. Serve and Garnish
      • Sprinkle with fresh parsley or chives before serving, if desired.

    Tips

    • Customization: Add shredded cheese during the last 10 minutes of baking for a creamy twist.
    • Make it Spicy: Toss in some red pepper flakes or sliced jalapeños for a kick.
    • Shortcut: Use pre-cooked bacon and frozen green beans to save time.
