Pirim doce

Pirim-doce is a traditional dessert from Cape Verde, specifically from the island of Santiago. It’s a coconut and sugar-based treat, often compared to fudge or a sweet coconut candy. Its name roughly translates to “sweet bread,” though it is not a bread in the typical sense.

Ingredients:

  • 2 cups of shredded coconut (fresh is ideal, but dried can work)
  • 1 ½ cups of sugar
  • 1 cup of water
  • 1 cinnamon stick
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt

Optional Add-ins:

  • Ground cinnamon or nutmeg
  • Lemon zest
  • Crushed peanuts or almonds

Instructions:

  1. Prepare the Syrup:
    In a medium saucepan, combine the sugar, water, cinnamon stick, and salt. Bring this to a simmer over medium heat, stirring occasionally to dissolve the sugar. Let the mixture cook until it thickens into a syrup-like consistency, about 10-15 minutes.
  2. Add the Coconut:
    Once the syrup has thickened, remove the cinnamon stick and add the shredded coconut. Stir continuously, ensuring the coconut is fully coated with the syrup. Cook the mixture over low heat for another 10-15 minutes, stirring frequently, until the coconut absorbs the syrup and the mixture starts to pull away from the sides of the pan.
  3. Add Flavors:
    Stir in the vanilla extract, and any other optional add-ins like ground cinnamon, nutmeg, or lemon zest. You can also fold in crushed peanuts or almonds for added texture.
  4. Shape the Pirim-doce:
    Remove the mixture from heat. While it’s still warm, spoon the mixture onto a parchment-lined baking sheet, shaping it into small rounds or bars. You can use your hands or a spoon to press it into the desired shape.
  5. Cool and Serve:
    Let the pirim-doce cool completely before serving. As it cools, it will harden into a chewy, fudgy texture.
