Ingredients:

  • 2 cups shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • 2 oz cream cheese, softened
  • 2 large eggs
  • 1 ½ cups ground pork rinds (as a flour replacement)
  • 1 tsp baking powder
  • 1 cup sliced pepperoni (use sugar-free, uncured if possible)
  • ½ tsp garlic powder (optional for a slight flavor boost)
  • Salt to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or grease it well.
  2. Melt the Cheese: In a large microwave-safe bowl, combine the mozzarella and cream cheese. Microwave on high for 1 minute, stirring halfway, until melted and fully combined.
  3. Mix Dry Ingredients: In another bowl, mix the ground pork rinds, parmesan cheese, baking powder, and optional garlic powder.
  4. Combine Ingredients: Add the eggs and dry ingredients to the melted cheese mixture. Stir until it forms a dough. Add in the pepperoni slices and fold them evenly throughout the dough.
