Ingredients:

  • 1½ cups all-purpose flour

  • ½ cup granulated sugar

  • ½ cup brown sugar (light or dark)

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

  • ¼ tsp nutmeg (optional, for warmth)

  • 2 large eggs

  • ½ cup vegetable oil

  • ¼ cup sour cream or Greek yogurt

  • 1 tsp vanilla extract

  • 1½ cups peeled and chopped ripe peaches (fresh or canned, well-drained)

  • ½ cup chopped pecans

  • Optional topping: a few peach slices + chopped pecans + sprinkle of sugar

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

  2. Mix dry ingredients: In a large bowl, whisk together flour, both sugars, baking soda, salt, cinnamon, and nutmeg.

  3. Whisk wet ingredients: In another bowl, beat the eggs, then add oil, sour cream, and vanilla. Mix until smooth.

  4. Combine: Pour wet ingredients into the dry. Stir just until combined — do not overmix.

  5. Fold in the chopped peaches and pecans gently using a spatula.

  6. Pour batter into the prepared loaf pan. Optional: top with a few peach slices, pecans, and a sprinkle of sugar for a caramelized crust.

  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if it browns too quickly.

  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

📝 Notes:

  • Want extra moisture? Add 2 tbsp of peach juice or a dash of buttermilk.

  • For a gluten-free version, use a 1:1 GF flour blend and check the baking time earlier.
