🍑 Peach Pecan Bread Recipe
Ingredients:
-
1½ cups all-purpose flour
-
½ cup granulated sugar
-
½ cup brown sugar (light or dark)
-
1 tsp baking soda
-
½ tsp salt
-
1 tsp cinnamon
-
¼ tsp nutmeg (optional, for warmth)
-
2 large eggs
-
½ cup vegetable oil
-
¼ cup sour cream or Greek yogurt
-
1 tsp vanilla extract
-
1½ cups peeled and chopped ripe peaches (fresh or canned, well-drained)
-
½ cup chopped pecans
-
Optional topping: a few peach slices + chopped pecans + sprinkle of sugar
Instructions:
-
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
-
Mix dry ingredients: In a large bowl, whisk together flour, both sugars, baking soda, salt, cinnamon, and nutmeg.
-
Whisk wet ingredients: In another bowl, beat the eggs, then add oil, sour cream, and vanilla. Mix until smooth.
-
Combine: Pour wet ingredients into the dry. Stir just until combined — do not overmix.
-
Fold in the chopped peaches and pecans gently using a spatula.
-
Pour batter into the prepared loaf pan. Optional: top with a few peach slices, pecans, and a sprinkle of sugar for a caramelized crust.
-
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if it browns too quickly.
-
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
📝 Notes:
-
Want extra moisture? Add 2 tbsp of peach juice or a dash of buttermilk.
-
For a gluten-free version, use a 1:1 GF flour blend and check the baking time earlier.
