oatmeal cake

Here’s a simple and delicious recipe for a flourless and sugar-free oatmeal cake. It uses natural sweetness from bananas or a sugar substitute.

Ingredients:

  • 2 cups rolled oats
  • 2 large ripe bananas (mashed) or 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1/3 cup honey, maple syrup, or sugar-free sweetener of your choice (optional for added sweetness)
  • 1/2 cup milk (dairy or plant-based)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Optional mix-ins: nuts, raisins, dark chocolate chips, or shredded coconut

Instructions:

  1. Preheat oven: Set your oven to 350°F (175°C) and grease an 8×8-inch baking dish or line it with parchment paper.
  2. Prepare the batter:
    • In a large bowl, combine the mashed bananas (or applesauce) with eggs, milk, honey or syrup (if using), vanilla extract, and cinnamon. Mix until well combined.
    • Add the oats, baking powder, and salt. Stir until everything is mixed evenly.
    • Fold in any optional mix-ins.
  3. Bake: Pour the batter into the prepared baking dish and spread it out evenly. Bake for 25–30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  4. Cool and serve: Let the cake cool for 10–15 minutes before slicing. Serve as is, or with a dollop of yogurt or nut butter on top.

This cake is moist, naturally sweet, and great for breakfast or a snack! Let me know how it turns out!
