Ingredients:

  • 1 ½ cups oat flour (store-bought or homemade from rolled oats)

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter, softened (or coconut oil for dairy-free)

  • ½ cup brown sugar (or coconut sugar)

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ cup chocolate chips or chopped nuts (optional)

  • Instructions:

    1. Preheat Oven to 350°F (175°C). Line a baking sheet with parchment paper.

    2. Mix Dry Ingredients: In a medium bowl, whisk together oat flour, baking soda, and salt.

    3. Cream Butter & Sugars: In a large bowl, beat the softened butter with brown and white sugar until light and fluffy. Add the egg and vanilla extract and mix well.

    4. Combine: Gradually stir the dry ingredients into the wet until just combined. Fold in chocolate chips or nuts if using.

    5. Scoop & Shape: Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.

    6. Bake: Bake for 9–11 minutes, or until the edges are lightly golden. The centers may look slightly soft — that’s perfect!

    7. Cool: Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.

    8. Tips:

      • For homemade oat flour: Blend rolled oats in a food processor until fine.

      • Chill the dough for 20–30 minutes if cookies spread too much.

      • Add a pinch of cinnamon or nutmeg for extra flavor.
