No-Knead Garlic Bread

Here’s a no-knead garlic bread recipe that delivers bakery-style results with minimal effort. Perfect for pasta nights, soups, or simply on its own, this bread boasts a golden crust and soft, flavorful interior packed with roasted garlic goodness.

This recipe takes all the labor out of bread making—no stand mixer, no kneading, and no fuss. It’s made with simple pantry staples and slow-fermented overnight for deep flavor. Roasted garlic gets folded into the dough, giving every bite a buttery, savory punch.

Ingredients

For the Dough:

  • 3 cups all-purpose flour

  • 1½ tsp salt

  • ½ tsp instant yeast

  • 1¼ cups warm water

  • 1 head of garlic (roasted)

  • 1 tbsp olive oil

For the Garlic Butter Topping:

  • 3 tbsp unsalted butter, melted

  • 2 garlic cloves, minced

  • 1 tbsp chopped fresh parsley (optional)

  • Pinch of salt

  • Instructions

    1. Roast the Garlic

    • Preheat oven to 400°F (200°C).

    • Slice the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden. Let cool and squeeze out the cloves.

    2. Mix the Dough

    • In a large bowl, stir together flour, salt, and yeast.

    • Add warm water and roasted garlic, gently mashed or broken into small bits.

    • Mix with a spoon until a shaggy dough forms.

    • Cover with plastic wrap or a lid and let rest at room temperature for 12 to 18 hours.

    3. Shape and Rest

    • Flour your hands and a work surface.

    • Gently turn out the dough, shape it into a ball (don’t knead!), and let it rest on a parchment-lined surface for 30–45 minutes.

    4. Preheat the Oven

    • Place a Dutch oven (or heavy oven-safe pot with lid) in the oven and preheat to 450°F (230°C) for at least 30 minutes.

    5. Bake the Bread

    • Carefully transfer the dough (with parchment) into the hot pot.

    • Cover and bake for 30 minutes.

    • Remove the lid and bake another 10–15 minutes until golden brown and crusty.

    6. Add Garlic Butter

    • While the bread is hot, brush the top with the melted garlic butter and sprinkle with parsley.

    • Serving Suggestions

      Serve warm with pasta, soups, or as a base for bruschetta. It also makes amazing grilled cheese!
