🍫 No-Bake Chocolate Oat Bars
Ingredients:
-
1 cup (240g) natural peanut butter (or almond butter)
-
1/2 cup (115g) coconut oil (or unsalted butter)
-
1/2 cup (100g) brown sugar or coconut sugar
-
2 tsp vanilla extract
-
3 cups (270g) gluten-free rolled oats
-
1/4 tsp salt
-
1 cup (175g) semi-sweet or dark chocolate chips
-
Optional: 2 tbsp chia seeds or shredded coconut for extra texture
Instructions:
-
Melt base mixture:
In a medium saucepan over low heat, combine peanut butter, coconut oil, and sugar. Stir frequently until completely melted and smooth. Remove from heat and stir in vanilla extract. -
Add oats:
Mix in the oats and salt until fully coated. (Add chia seeds or coconut now if using.) -
Press into pan:
Line an 8×8 inch (20×20 cm) pan with parchment paper. Pour half of the oat mixture into the pan and press down firmly with a spatula or the back of a spoon. -
Chocolate layer:
In a microwave-safe bowl, melt the chocolate chips in 20–30 second bursts, stirring until smooth. Pour over the oat layer and spread evenly. -
Top layer:
Spoon remaining oat mixture on top of the chocolate. Press gently — don’t spread too hard to avoid smearing the chocolate. -
Chill:
Refrigerate for at least 2 hours or until firm. Slice into bars and enjoy!
🧊 Storage:
Keep refrigerated in an airtight container for up to 1 week or freeze for up to 2 months.
