Monkey butter is a sweet, fruity spread typically made with bananas, pineapple, coconut, and sugar. It’s a delightful and versatile treat that can be used as a topping for toast, pancakes, waffles, or even as a filling for cakes and pastries. Here’s a simple recipe to make monkey butter:

Ingredients:

  • 3 ripe bananas, mashed
  • 1 can (20 oz) crushed pineapple with juice
  • 1/4 cup shredded coconut
  • 2 cups granulated sugar
  • 1 tablespoon lemon juice

Instructions:

  1. In a large saucepan, combine the mashed bananas, crushed pineapple with juice, shredded coconut, sugar, and lemon juice.
  2. Cook the mixture over medium heat, stirring frequently to prevent sticking, until it comes to a boil.
  3. Reduce the heat and let it simmer for about 30 minutes, stirring occasionally, until the mixture thickens to a jam-like consistency.
  4. Remove the saucepan from heat and let it cool slightly.
  5. Transfer the monkey butter to sterilized jars and seal them tightly. It can be stored in the refrigerator for up to a month.
