Mississippi Mud Potatoes

Mississippi Mud Potatoes are a hearty, indulgent side dish inspired by the rich flavors of the South. Much like the famous Mississippi Mud Pie, this dish combines layers of texture and taste. Creamy, cheesy, and loaded with smoky bacon, these potatoes are topped with a crunchy crust for a crowd-pleasing treat.

Ingredients:

  • 4 large russet potatoes, peeled and diced into 1-inch cubes
  • 4 slices of bacon, cooked and crumbled
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup green onions, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup crushed crackers (like Ritz) or breadcrumbs for topping
  • 2 tablespoons unsalted butter, melted
  • Instructions:

    1. Preheat and Prepare:
      Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
    2. Cook Potatoes:
      Place diced potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Reduce heat to a simmer and cook until tender, about 10-12 minutes. Drain and let cool slightly.
    3. Mix Ingredients:
      In a large mixing bowl, combine sour cream, mayonnaise, garlic powder, smoked paprika, and half of the cheddar cheese. Mix well. Gently fold in the cooked potatoes, bacon (reserve a little for topping), and green onions. Season with salt and pepper to taste.
    4. Assemble the Dish:
      Transfer the potato mixture to the prepared baking dish. Spread it out evenly. Sprinkle the remaining cheddar cheese on top.
    5. Add Crunchy Topping:
      In a small bowl, mix the crushed crackers or breadcrumbs with melted butter. Sprinkle this mixture over the cheese layer. Add reserved bacon bits for extra flavor.
    6. Bake:
      Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbly.
    7. Serve:
      Let cool for 5 minutes before serving. Garnish with additional green onions if desired.
    8. Tips:
      • For added flavor, try adding a dash of hot sauce to the sour cream mixture.
      • This dish can be made a day ahead and reheated for convenience.
