Milk Brioche Rolls are the epitome of soft, pillowy bread, perfect for sandwiches, dinner rolls, or enjoying with a spread of butter and jam. Their subtle sweetness and rich, buttery flavor make them versatile and crowd-pleasing.
Ingredients:
For the Dough:
- 3 ½ cups (440g) all-purpose flour
- ¼ cup (50g) granulated sugar
- 1 tsp salt
- 1 packet (2 ¼ tsp) instant yeast
- ½ cup (120ml) warm milk (110°F/43°C)
- 2 large eggs
- ⅓ cup (75g) unsalted butter, softened
- ¼ cup (60ml) warm water
For the Egg Wash:
- 1 egg
- 1 tbsp milk
-
Instructions:
1. Prepare the Dough:
- In a large mixing bowl, combine the flour, sugar, salt, and yeast.
- In a separate bowl, whisk together the warm milk, water, and eggs. Gradually add this mixture to the dry ingredients.
- Knead the dough on a lightly floured surface or with a stand mixer fitted with a dough hook until it comes together. Add the softened butter in small pieces, kneading until fully incorporated and the dough becomes smooth and elastic (about 8–10 minutes).
2. First Rise:
- Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1–1.5 hours, or until it doubles in size.
3. Shape the Rolls:
- Punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball.
- Arrange the balls on a greased or parchment-lined baking sheet, leaving a bit of space between each for expansion.
4. Second Rise:
- Cover the rolls loosely with plastic wrap or a damp kitchen towel and let them rise for 30–45 minutes, or until puffed.
5. Preheat the Oven:
- While the rolls rise, preheat your oven to 375°F (190°C).
6. Egg Wash and Bake:
- In a small bowl, whisk the egg and milk together. Brush the mixture over the rolls for a shiny, golden crust.
- Bake the rolls for 15–18 minutes, or until golden brown.
7. Cool and Serve:
- Remove the rolls from the oven and allow them to cool slightly on a wire rack. Serve warm or at room temperature.
- Tip:
For an extra touch of luxury, sprinkle the tops with pearl sugar or sesame seeds before baking. These rolls also freeze beautifully, so you can enjoy them anytime!
