Milk Brioche Rolls are the epitome of soft, pillowy bread, perfect for sandwiches, dinner rolls, or enjoying with a spread of butter and jam. Their subtle sweetness and rich, buttery flavor make them versatile and crowd-pleasing.

Ingredients:

For the Dough:

  • 3 ½ cups (440g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 1 tsp salt
  • 1 packet (2 ¼ tsp) instant yeast
  • ½ cup (120ml) warm milk (110°F/43°C)
  • 2 large eggs
  • ⅓ cup (75g) unsalted butter, softened
  • ¼ cup (60ml) warm water

For the Egg Wash:

  • 1 egg
  • 1 tbsp milk
  • Instructions:

    1. Prepare the Dough:

    1. In a large mixing bowl, combine the flour, sugar, salt, and yeast.
    2. In a separate bowl, whisk together the warm milk, water, and eggs. Gradually add this mixture to the dry ingredients.
    3. Knead the dough on a lightly floured surface or with a stand mixer fitted with a dough hook until it comes together. Add the softened butter in small pieces, kneading until fully incorporated and the dough becomes smooth and elastic (about 8–10 minutes).

    2. First Rise:

    1. Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1–1.5 hours, or until it doubles in size.

    3. Shape the Rolls:

    1. Punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball.
    2. Arrange the balls on a greased or parchment-lined baking sheet, leaving a bit of space between each for expansion.

    4. Second Rise:

    1. Cover the rolls loosely with plastic wrap or a damp kitchen towel and let them rise for 30–45 minutes, or until puffed.

    5. Preheat the Oven:

    1. While the rolls rise, preheat your oven to 375°F (190°C).

    6. Egg Wash and Bake:

    1. In a small bowl, whisk the egg and milk together. Brush the mixture over the rolls for a shiny, golden crust.
    2. Bake the rolls for 15–18 minutes, or until golden brown.

    7. Cool and Serve:

    1. Remove the rolls from the oven and allow them to cool slightly on a wire rack. Serve warm or at room temperature.
    2. Tip:
      For an extra touch of luxury, sprinkle the tops with pearl sugar or sesame seeds before baking. These rolls also freeze beautifully, so you can enjoy them anytime!
