This Mexican Tortilla Casserole brings the comforting flavors of a classic taco into an easy, layered casserole. With layers of tortillas, seasoned ground beef, refried beans, melty cheese, and a tangy salsa topping, this dish is packed with flavor in every bite.
Ingredients:
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning
- 1 can (15 oz) refried beans
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup salsa
- 1 cup frozen corn, thawed
- 6-8 small flour or corn tortillas
- 2 cups shredded Mexican cheese blend
- Optional toppings: sour cream, green onions, cilantro, guacamole
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook the Ground Meat: In a skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain any excess fat, then stir in the taco seasoning according to package instructions.
- Prepare the Filling: Add refried beans, black beans, diced tomatoes with green chilies, and salsa to the skillet with the cooked beef. Stir to combine, and cook for another 2-3 minutes until heated through. Mix in the corn.
