Mexican Sopita

Mexican sopita, also known as “sopa de fideo,” is a comforting and popular noodle soup in Mexican cuisine. Here’s a simple recipe to make Mexican sopita:

Ingredients:

  • 1 cup of fideo noodles (or any small pasta like vermicelli or elbow macaroni)
  • 2 tablespoons of vegetable oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups of chicken broth (or water)
  • 1 can (14.5 oz) of diced tomatoes
  • 1-2 teaspoons of tomato bouillon (optional for extra flavor)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional for garnish)
  • Lime wedges (optional for serving)

Instructions:

  1. Toast the Noodles:
    • In a large pot or skillet, heat the vegetable oil over medium heat.
    • Add the fideo noodles and cook, stirring constantly, until they are golden brown. Be careful not to burn them.
  2. Cook the Aromatics:
    • Add the chopped onion and minced garlic to the pot with the toasted noodles.
    • Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
  3. Add Broth and Tomatoes:
    • Pour in the chicken broth and add the diced tomatoes (including their juice).
    • Stir in the tomato bouillon if using.
  4. Simmer the Soup:
    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover and simmer for about 10-15 minutes, or until the noodles are tender.
  5. Season and Serve:
    • Taste the soup and season with salt and pepper as needed.
    • Ladle the sopita into bowls and garnish with fresh cilantro if desired.
    • Serve with lime wedges on the side for a squeeze of fresh lime juice.
