Mexican Green Chile Fry Bread Stack

This dish is a bold and savory twist on classic Navajo fry bread, layered high with flavorful Mexican ingredients and a creamy green chile sauce that packs just the right amount of heat. Each bite brings a satisfying crunch from the golden fry bread, the richness of seasoned meat, and the zesty brightness of fresh toppings. It’s perfect for a fun family dinner or a festive gathering — a true showstopper you’ll want to make again and again.

Ingredients:

For the Fry Bread:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp salt

  • ¾ cup warm water (add more if needed)

  • Oil for frying (vegetable or canola)

For the Meat Layer:

  • 1 lb ground beef or shredded chicken

  • 1 tsp cumin

  • 1 tsp chili powder

  • ½ tsp garlic powder

  • Salt and pepper to taste

  • ½ cup diced onions (optional)

Green Chile Sauce:

  • 1 tbsp butter

  • 1 tbsp flour

  • 1 cup chicken or vegetable broth

  • 1 cup roasted green chiles, chopped

  • ½ cup sour cream or Mexican crema

  • Salt to taste

Toppings:

  • Shredded lettuce

  • Diced tomatoes

  • Shredded cheese (cheddar, pepper jack, or Mexican blend)

  • Sliced black olives (optional)

  • Chopped cilantro

  • Sliced jalapeños (optional)

  • Instructions:

    1. Make the Fry Bread:

    1. In a large bowl, whisk together flour, baking powder, and salt.

    2. Slowly add warm water and mix until a soft dough forms.

    3. Divide into 4-6 balls and let rest, covered, for 10 minutes.

    4. Roll each ball into a flat disk (about ¼-inch thick).

    5. Heat oil in a skillet (about 1 inch deep) over medium heat.

    6. Fry each piece until golden brown and puffed, about 1–2 minutes per side. Drain on paper towels.

    2. Cook the Meat:

    1. In a skillet over medium heat, cook the beef or chicken with seasonings and onions until fully cooked and flavorful.

    3. Prepare the Green Chile Sauce:

    1. Melt butter in a saucepan. Whisk in flour and cook for 1 minute.

    2. Slowly whisk in broth until smooth and thickened.

    3. Stir in green chiles and simmer 5 minutes.

    4. Add sour cream, stir well, and season to taste.

    4. Assemble the Fry Bread Stack:

    1. Place one fry bread on a plate.

    2. Layer with meat, green chile sauce, and cheese.

    3. Add another fry bread on top and repeat.

    4. Top the final layer with lettuce, tomatoes, more sauce, and your favorite toppings.

      Tips:

      • Make it vegetarian by swapping meat for seasoned black beans or grilled veggies.

      • Add a fried egg on top for a brunch twist.
