Low Carb Sandwiches

Ingredients:

  • 1 large head of Romaine or iceberg lettuce (choose large leaves)
  • 6 oz sliced turkey, ham, or roast beef
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 1 avocado, thinly sliced
  • 1 small tomato, thinly sliced
  • 4 slices of cooked bacon (optional)
  • Mayonnaise, mustard, or your favorite low-carb dressing
  • Salt and pepper to taste

Instructions:

  1. Prepare the Lettuce Wraps: Wash and pat dry the lettuce leaves. Use large, sturdy leaves to ensure they can hold the fillings.
  2. Layer the Ingredients: Lay a lettuce leaf flat and layer your choice of deli meat, a slice of cheese, a couple of avocado slices, a few tomato slices, and bacon if desired.
  3. Add Condiments: Spread a thin layer of mayonnaise or mustard over the fillings, then season with salt and pepper.
  4. Wrap It Up: Gently fold the lettuce leaf around the fillings, securing it with a toothpick if necessary. Repeat with additional lettuce leaves to make more sandwiches.
  5. Serve: Enjoy your low-carb lettuce wrap sandwiches immediately, or store them in the fridge in an airtight container for up to one day.

These refreshing low-carb sandwiches are versatile, and you can mix and match fillings like smoked salmon, cream cheese, or cucumber slices for more variety!
