Here’s a delicious Blueberry Cream Cheese Loaf recipe! This moist and tender loaf is swirled with a rich cream cheese filling and bursting with juicy blueberries—perfect for breakfast, brunch, or a sweet treat with coffee.

Blueberry Cream Cheese Loaf Recipe

Makes: 1 loaf
Prep Time: 15 minutes
Bake Time: 50-60 minutes

Ingredients

For the Loaf:
  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) buttermilk (or substitute with milk + 1 tsp vinegar)
  • 1 ¼ cups (180g) fresh or frozen blueberries (tossed with 1 tbsp flour)
For the Cream Cheese Filling:
  • 8 oz (225g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven & Prep Pan

    • Preheat oven to 350°F (175°C).
    • Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Make the Batter

    • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
    • In a large bowl, beat butter and sugar until light and fluffy.
    • Add eggs one at a time, beating well after each addition.
    • Mix in vanilla extract.
    • Add flour mixture in two additions, alternating with buttermilk.
    • Gently fold in blueberries (tossed in flour to prevent sinking).
  3. Make the Cream Cheese Filling

    • In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
  4. Assemble the Loaf

    • Pour half of the batter into the loaf pan.
    • Spoon cream cheese filling over the batter and spread gently.
    • Add the remaining batter on top and smooth it out.
  5. Bake

    • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
    • If the top browns too quickly, loosely cover with foil during the last 15 minutes.
  6. Cool & Serve

    • Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
    • Slice and enjoy!
