Ingredients:

  • ½ cup powdered sugar

  • 1–2 tbsp lemon juice

  • Instructions:

    1. Prep: Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

    2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

    3. Coat Blueberries: Toss blueberries with 1 tbsp of the flour mixture to prevent sinking. Set aside.

    4. Cream Butter & Sugar: In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla, lemon zest, and lemon juice.

    5. Combine: Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Mix just until combined. Fold in the blueberries gently.

    6. Bake: Pour the batter into the prepared pan. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.

    7. Make Glaze: In a small bowl, mix powdered sugar with lemon juice until smooth. Drizzle over cooled bread.
