Homemade Spicy Ramen Noodles

Here’s a delicious, homemade spicy ramen noodles recipe that’s simple to make yet packed with flavor. This dish combines chewy ramen noodles with a rich, savory broth that has a spicy kick, perfect for warming up or satisfying a craving.

Ingredients:

For the Broth:

  • 4 cups chicken or vegetable broth
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1-2 tbsp chili paste (like gochujang or sriracha, adjust to taste)
  • 1 tbsp miso paste (optional, for depth)
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated

For the Noodles:

  • 2 packs of fresh or instant ramen noodles

Toppings (Optional):

  • 1 soft-boiled egg, halved
  • Green onions, sliced
  • Fresh spinach or bok choy
  • Sliced mushrooms
  • Shredded carrots
  • Sesame seeds

Instructions:

  1. Prepare the Broth: In a pot, heat the sesame oil over medium heat. Add garlic and ginger and sauté until fragrant, about 1-2 minutes. Stir in the chili paste, soy sauce, and miso paste (if using) until combined.
  2. Add Broth: Pour in the chicken or vegetable broth. Bring to a boil, then reduce heat and let it simmer for 5-10 minutes to allow the flavors to meld. Taste and adjust spice level or saltiness if needed.
  3. Cook the Noodles: In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.
  4. Combine & Serve: Add the cooked noodles to the broth, and stir to coat. Divide the noodles and broth into bowls.
  5. Add Toppings: Top with a halved soft-boiled egg, green onions, and any other preferred toppings like mushrooms, spinach, or sesame seeds.
  6. Enjoy: Serve hot and enjoy the bold flavors of your homemade spicy ramen!
