Homemade Shepherd’s Pie

Shepherd’s Pie is a classic comfort dish that brings warmth and hearty flavors to the table. Originating from the British Isles, this savory casserole combines a rich meat filling topped with creamy mashed potatoes.

Ingredients:

For the Meat Filling:

  • 1 lb ground lamb (or beef for Cottage Pie)
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup beef or chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

For the Mashed Potato Topping:

  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Meat Filling:
    • Heat olive oil in a large skillet over medium heat. Add onions, carrots, celery, and garlic. Cook until softened.
    • Add ground lamb and cook until browned. Drain excess fat if needed.
    • Stir in tomato paste, Worcestershire sauce, thyme, and rosemary. Cook for 2 minutes.
    • Pour in broth and simmer for 10-15 minutes until thickened. Stir in peas and season with salt and pepper.
  2. Make the Mashed Potatoes:
    • Boil potatoes in salted water until tender. Drain and return to the pot.
    • Add milk, butter, salt, and pepper. Mash until smooth and creamy.
  3. Assemble the Shepherd’s Pie:
    • Preheat oven to 400°F (200°C).
    • Spread meat filling evenly in a baking dish. Top with mashed potatoes, spreading them to cover the filling completely.
    • For extra richness, sprinkle shredded cheddar cheese on top.
  4. Bake and Serve:
    • Bake for 25-30 minutes, or until the top is golden brown and bubbly.
    • Let rest for 10 minutes before serving.
