Homemade Sausage Rolls

There’s something undeniably comforting about a freshly baked sausage roll, golden and flaky on the outside, savory and perfectly seasoned on the inside. Making sausage rolls at home is easier than you might think, and the results are far superior to anything store-bought.

Ingredients

For the Sausage Filling:

  • 500g (1 lb) pork sausage meat (or high-quality sausages, casing removed)
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon dried sage (or fresh, finely chopped)
  • 1 teaspoon dried thyme
  • ½ teaspoon ground nutmeg
  • Salt and black pepper to taste

For the Pastry:

  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)
  • Sesame seeds or poppy seeds (optional, for topping)
  • Instructions

    1. Preheat the Oven
      Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
    2. Prepare the Sausage Filling
      In a mixing bowl, combine the sausage meat, onion, garlic, sage, thyme, nutmeg, salt, and pepper. Mix well until evenly combined.
    3. Prepare the Pastry
      Roll out the puff pastry on a lightly floured surface. Cut the sheet into two long rectangles, about 10 cm (4 inches) wide.
    4. Assemble the Sausage Rolls
      • Divide the sausage mixture into two portions and shape each into a long log, about the length of the pastry rectangles.
      • Place the sausage log along one edge of the pastry.
      • Brush the opposite edge of the pastry with beaten egg, then roll the pastry tightly around the sausage filling, sealing the edge.
    5. Cut and Glaze
      • Slice the rolls into smaller pieces, about 5–6 cm (2 inches) long, or to your desired size.
      • Place them seam-side down on the prepared baking sheet.
      • Brush the tops with beaten egg and sprinkle with sesame or poppy seeds if using.
    6. Bake
      Bake in the preheated oven for 20–25 minutes, or until the pastry is golden and puffed, and the sausage is cooked through.
    7. Cool and Serve
      Let the sausage rolls cool slightly before serving. They’re delicious warm or at room temperature!
