¼ cup sugar
-
1 tbsp baking powder
-
½ tsp salt
-
½ tsp ground nutmeg (optional, for classic donut flavor)
-
2 large eggs
-
½ cup whole milk (or dairy-free milk)
-
¼ cup unsalted butter, melted (or coconut oil)
-
1 tsp pure vanilla extract
For frying:
-
Oil for deep frying (vegetable or canola oil)
Optional coatings:
-
Granulated sugar, cinnamon sugar, powdered sugar, or a simple glaze
-
Instructions:
-
Make the dough:
In a large bowl, whisk together gluten-free flour, sugar, baking powder, salt, and nutmeg.
In another bowl, beat the eggs, then mix in milk, melted butter, and vanilla.
Gradually add the wet ingredients to the dry, stirring until a soft dough forms. Let it rest for 10 minutes. -
Roll and cut:
Lightly flour your surface with gluten-free flour. Roll dough to about ½ inch thickness.
Use a donut cutter or two round cutters (3″ and 1″ for center holes) to shape the donuts. -
Heat oil:
In a deep pot, heat about 2–3 inches of oil to 350°F (175°C). Carefully slide 2–3 donuts in at a time. -
Fry:
Fry each donut for 1–2 minutes per side, until golden brown. Use a slotted spoon to remove and place on paper towels to drain. -
Coat:
While warm, toss donuts in your desired sugar coating or let cool slightly before glazing.Tips:
-
If dough is sticky, chill it for 15 minutes before rolling.
-
Don’t overcrowd the fryer; it cools the oil and makes greasy donuts.
-
Add a touch of cinnamon or cardamom for a spiced twist!
