High Protein Peanut Butter Cups Recipe

Ingredients:

For the Peanut Butter Filling:

  • 1/2 cup peanut butter (preferably natural or unsweetened)
  • 2 tablespoons honey or maple syrup (optional for sweetness)
  • 1/4 cup protein powder (vanilla or chocolate flavor works best, or use a plant-based option)
  • 1/4 teaspoon vanilla extract (optional)
  • Pinch of salt (optional)

For the Chocolate Coating:

  • 1/2 cup dark chocolate chips (or sugar-free chocolate chips for a healthier version)
  • 1 tablespoon coconut oil (for smoothness)

Instructions:

  1. Prepare the Peanut Butter Filling:
    • In a medium-sized bowl, combine the peanut butter, protein powder, honey (if using), vanilla extract, and a pinch of salt.
    • Stir until the mixture is smooth and fully combined. If it’s too thick, you can add a little more peanut butter or a splash of almond milk to reach a smooth, moldable consistency.
  2. Prepare the Chocolate Coating:
    • In a small microwave-safe bowl, melt the dark chocolate chips and coconut oil together. Heat in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  3. Assemble the Peanut Butter Cups:
    • Line a muffin tin with cupcake liners.
    • Pour a small amount of melted chocolate (about 1 tablespoon) into the bottom of each liner, spreading it slightly to cover the bottom. Place the tin in the freezer for about 10 minutes to set the chocolate.
    • Once the bottom layer has hardened, add about 1-2 tablespoons of the peanut butter mixture on top of the set chocolate layer, pressing it down slightly to form an even layer.
    • Finally, pour the remaining melted chocolate over the peanut butter layer, covering it completely.
  4. Freeze and Set:
    • Place the entire tray back into the freezer and let the peanut butter cups set for at least 30 minutes or until fully firm.
  5. Serve:
    • Once set, remove the peanut butter cups from the muffin tin and enjoy! Store any leftovers in an airtight container in the fridge or freezer for up to a week.
