Ingredients:
Dry:

2 ¾ cups cake flour (sifted)

1 tbsp baking powder

½ tsp salt
Wet:

¾ cup unsalted butter, room temp

1 ¾ cups granulated sugar

1 tbsp vanilla extract

1 cup whole milk, room temp

5 egg whites, room temp
Instructions:

Prep:
Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. -
Dry Mix:
In a medium bowl, whisk together cake flour, baking powder, and salt. -
Cream Butter & Sugar:
In a large bowl, beat butter until creamy. Gradually add sugar and beat until light and fluffy (about 3–5 minutes). -
Add Vanilla & Dry Mix:
Mix in vanilla. Alternately add dry ingredients and milk in 2–3 parts, beginning and ending with flour. Don’t overmix. -
Whip Egg Whites:
In a clean bowl, whip egg whites to stiff peaks. Gently fold into batter in 3 additions for maximum fluffiness. -
Bake:
Divide batter evenly between pans. Bake for 25–30 minutes or until a toothpick comes out clean. -
Cool:
Let cakes cool in pans for 10 mins, then transfer to wire racks to cool completely.
