Ingredients:

Dry:

  • 2 ¾ cups cake flour (sifted)

  • 1 tbsp baking powder

  • ½ tsp salt

Wet:

  • ¾ cup unsalted butter, room temp

  • 1 ¾ cups granulated sugar

  • 1 tbsp vanilla extract

  • 1 cup whole milk, room temp

  • 5 egg whites, room temp

Instructions:

  1. Prep:
    Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. Dry Mix:
    In a medium bowl, whisk together cake flour, baking powder, and salt.

  3. Cream Butter & Sugar:
    In a large bowl, beat butter until creamy. Gradually add sugar and beat until light and fluffy (about 3–5 minutes).

  4. Add Vanilla & Dry Mix:
    Mix in vanilla. Alternately add dry ingredients and milk in 2–3 parts, beginning and ending with flour. Don’t overmix.

  5. Whip Egg Whites:
    In a clean bowl, whip egg whites to stiff peaks. Gently fold into batter in 3 additions for maximum fluffiness.

  6. Bake:
    Divide batter evenly between pans. Bake for 25–30 minutes or until a toothpick comes out clean.

  7. Cool:
    Let cakes cool in pans for 10 mins, then transfer to wire racks to cool completely.
